Adding protein powder to baked goods is more complicated than simply swapping flour for powder at a 1:1 ratio. Protein powders behave fundamentally differently from flour — they don't contain gluten (the structural protein that gives baked goods elasticity), they absorb moisture differently, and they produce different crust and crumb textures when used in excess.

The 25% Rule

Casein consistently outperforms whey in baked goods. Casein absorbs moisture slowly (it's a slow-digesting protein by nature) and retains it during baking, producing a moister final product. Whey absorbs moisture rapidly and releases it quickly during baking, resulting in a drier crumb. If you can only use whey, compensate by adding 15ml (1 tbsp) extra liquid per 30g whey protein used in the recipe.
